Why does my coffee taste bitter or sour?Updated 7 days ago

Almost always, this comes down to extraction, which is how much flavor gets pulled out of the grounds.

  • Sour, sharp, or thin: under-extracted. Try a finer grind, hotter water, or a slightly longer brew time.
  • Bitter, harsh, or dry: over-extracted. Try a coarser grind, slightly cooler water, or a shorter brew time.

A few other things to check: that your grind matches your brew method, that your equipment is clean (old oils can taste bitter), and that your water is fresh and filtered if possible.
